Baby Bok Choy with
Orange and Ginger

Steaming is the prefered method
for cooking baby bok choy.

Ingredients:
2 Baby bok choy; each 6-to-8-inches long
1 tb Orange zest; julienne or grated
1/4 ts minced ginger; to taste

Directions:
Rinse the boy choy well.
Cut in half lengthwise.
Place bok choy in a single layer
on a rack in a steamer, cut side up.
Sprinkle with the orange zezt and
the minced ginger.
on the heart of the vegetable.
Cover and cook over for 6 to 8 minutes,
or when fork tender. Serve with the zest.
