Canned Salmon Wiggle

Wiggle is a New England term for
a hot plate dish of creamed food.
Usually seafood like shrimp, salmon
or even a simple canned tuna fish.
Here is a recipe for using canned salmon.
I like to serve this on buttered crackers.

Ingredients:
1 cup milk
4 tablespoons butter
1/2 cup green pepper
1/4 cup plain flour
1/2 teaspoon dry mustard
1 cup peas
Dash cayenne
1 cup tomato juice
1 egg, beaten
6 ounce shredded Cheddar cheese
1 canned salmon, drained and flaked

Dirctions:
In 3 quart saucepan melt butter,
add peppers, saute 3 minutes.
Stir in flour and mustard and cayenne.
Take from heat, add tomato juice,
then gradually add milk.
Cook over medium heat stirring
until thickened 2 more minutes.
Stir small amount into egg.
Return to saucepan. Cook 1 minute.
Remove from heat, stir in cheese until melted.
May melt cheese over low heat (DO NOT BOIL).
Add salmon and peas. Heat to serving temperature.
Serve over toast, rice or toasted rolls.
