Meatloaf with Italian Sausage and Beef

I had some cooked sweet Italian sausage and
a pound of ground beef in the refrigerator.
So I quickly put this meatloaf together and
let it cook uncovered in the oven for an hour.
I used a food processor to mince the vegetables.
Sometimes the slap bang recipies come out good,
this one makes for a moist and tasty meatloaf.

Ingredients:
1 small onion, peeled and minced
1 small carrot, peeled and minced
1 stalk of celery, minced
1/2 cup rolled oats, minced
1 pound of ground beef 85/15
2 cooked Italian sausage links, minced
1/4 cup green bell pepper, chopped
1/2 cup tomato sauce
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon Old Bay Seasoning
1/4 cup tomato ketchup

Directions:
Preheat oven to 350 degrees F.
Mince onion,celery and carrot and
place into a mixing bowl.
Add minced rolled oats, sausage, tomato
sauce and minced green bell pepper.
Add garlic, pepper and Old Bay Seasoning.
Mix together just until it holds together.
Place mixture into a glass baking dish,
form into a meatloaf shape of your liking.
Top with tomato ketchup.
Bake uncovered for about one hour.
Remove and let rest 15 minutes
before slicing and serving.

Creamy Baked Potato Stew

Tasty good with ham, onions and peas.
You bake this like scalloped potatoes
the day before and refrigerate it
over night to get a real creamy dish.
I find it irresistable to not taste
test this right out of the oven.

Ingredients:
1 tablespoon butter
2 tablespoons flour
1/2 teaspoon parsley
4 russet potatoes
1 small onion
1/2 cup frozen peas
1/2 cup cooked ham
1/2 teaspoon black pepper
salt to taste

Directions:
Preheat oven to 450 degrees F.
Butter the bottom of a casserole dish.
Peel and thinly slice potatoes and onion.
Layer potato, onion and sprinkle with
some flour and some black pepper.
Salt to taste.
Another layer of sliced potato and onion.
Place frozen peas and cooked ham on top.
Sprinkle more flour and black pepper.
Add another layer of potato and onion.
Pour in milk to almost cover mixture.
Cover with foil and bake for 1 hour.
Remove and let cool before refrigerating
over night. warm in a microwave oven.

Cake Mix Biscotti

You can make great biscotti cookies using
any packaged cake mix that taste great.
I used a chocolate boxed cake mix.
Easy recipe to do in less than an hour.

Ingredients:
1 boxed cake mix
2 large eggs
1 cup flour
8 tablespoons butter, melted
2 teaspoons vanilla
1 cup chopped nuts

Directions:
Preheat oven to 350 degrees F.
Place melted butter, eggs and
vanilla in a mixing bowl.
Beat until combined then slowly
add cake mix and flour, mix well.
Stir in chopped nuts mixing well.
Divide dough into two and form
into flattened logs on cookie sheet.
Bake for 30 minutes, remove to cool
for about ten minutes then slice
into 1/2 inch pieces. turn cookies
to lay on cookie sheet flat side down.
Return to oven and bake for another
additional 10 minutes or so.
Remove and cool before storing
in an air tight container.

Pork Chops and Baked Rice

This dish is so very easy to make.
Plain uncooked rice and a can of
cream of mushroom soup baked
together with some pork chops.
The rice is super creamy and the
pork chops are fork tender.

Ingredients:
4 boneless pork chops
1 cup uncooked basmati rice
2 cups water
1 can cream of mushroom soup

Directions:
Preheat oven to 375 degrees F.
Place pork chops in the bottom of a casserole dish.
In a bowl combine the soup with water and rice.
Pour rice mixture over pork chops, cover.o
Bake for about 1 1/2 hours.
