Bread Dough on the Grill

Yes you can bake bread dough on an outdoor grill.
It bakes up nice with grill marks and smoky flavor.
Sometimes it puffs up like pita pocket bread.
It's great for dipping into a marinara sauce.
Add sauce cheese and toppings for making pizza.

Ingredients:
1 pound fresh bread dough
Olive oil cooking spray
Tomato dipping sauce
Grated parmesan cheese

Directions:
Let bread dough come to room temperature.
Divide into 8 pieces and flatten into rounds.
Preheat grill to high heat and oil grill grates.
Place dough on grates and cover grill lid.
Bake foe about 5 minutes then turn dough
using a flat metal spatula and close grill.
Bake another 5 minutes or until done.
Remove and serve along with dipping sauce
and a sprinkle of grated parmesan cheese.

Avocado and Pineapple Salad

A refreshing salad cold or at room temperature.
The acid in the pineapple keeps the avocado green.
Add what ever you like or have on hand to this
and the flavors will amaze your taste buds.

Ingredients:
1 fresh pineapple
1 fresh avocado 3 fresh basil leaves
salt to taste

Directions:
Peel and core pineapple, slice into one inch slices,
cut into serving size pieces and place in a serving bowl.
Cut avocado and remove pit, slice and place in bowl.
Season with chopped fresh basil leaves and salt.

Grilled Fresh Tomatoes

These are slices of sweet juicy tomatoes,
grilled until soft and topped with cheese.
I also like to grill some onions with this.
Serve them warm or at room temperature.

Ingredients:
2 garden fresh tomatoes
2 sweet onions, peeled
dried basil
mozzarella cheese
vegetable spray
olive oil for drizzling

Directions:
Clean grill grates and spray them with
a vegetable based cooking spray.
Preheat grill to high heat.
Slice tomatoes and onions in thirds.
Place tomato and onion slices on grill,
cover and cook for about 5 minutes.
Using a spatula turn them over and
season them with dried basil to taste.
Sprinkle some grated mozzarella cheese on them.
Cover grill and cook them another 5 minutes.
Remove from grill to a serving plate and top with
a drizzle of olive oil just before serving.

Black Bean Tuna Salad

I made a tuna salad that is really tasty.
Whole chick peas and black beans gives it crunch.
I made a sandwich out of this tuna mixture but
it's so good you can eat it right out of the bowl.

Ingredients:

1 can tuna, drained
1 can chick peas, drained
1 can black beans, drained
1 small onion, diced
1 tablespoon mayonnaise
a dash of garlic powder
a dash of dried chives
a dash of ground pepper

Directions:

Mix all ingredients together, refrigerate leftovers.
