De Waffebakker's Egg Sandwich

Frozen pancakes with an egg in between.
This takes no time at all in the morning.
Using  the microwave to quick cook the egg,
in between two frozen pancakes is creative.
Sometimes American cheese works great in this.

Ingredients:
2 frozen pancakes
1 egg
1 tablespoon butter
a splash of black pepper
1 slice American cheese

Directions:
Place frozen pancakes in toaster oven on high.
Scramble an egg with butter in plastic bowl,
place black pepper on egg and microwave it
for about 45 seconds or until done.
Place egg in between pancakes, add cheese and enjoy.

French Fries Some Honey

Remember the first time you had Mcdonald's fries?
They had a sweet something in with the salt.
Years past and they replaced the beef fat with oil.
I made a batch of potato fries like Mcdonald's did,
and them replace beef fat (lard) with some honey.
French fry life is much better with some honey.

Ingredients:
Russet potatoes
Oil for frying
Salt
Honey

Directions:
Peel potatoes, cut into french fries.
Fry in oil and then drain on paper towels.
salt the fries to taste.
Add a few drops of honey to the fries.
Serve warm.

Sunny Side Up Lasagna

A egg served on top each lasagna serving.
I came up with this with 30 eggs in the refrigerator.
I made a tomato meat sauce to use on lasagna.
Cooked up lasagna noodles and ricotta cheese.
After baking the lasagna which was good enough.
It needed some thing to say it was special.

Ingredients:
2 cups tomato meat sauce
6 lasagna noodles, cooked
2 cups ricotta cheese
1 egg
1 or 2 tablespoons parsley
1 tablespoon salt
12 slices of provelone cheese
Some grated provelone cheese
6 eggs, whole sunny side

Directions:
In a 9x9 square dish add some tomato sauce
Mix up ricotta cheese with 1 egg, salt and parsley
Then a layer of lasagna noodles.
Add meat sauce in layers then add
lasagna noodles and then ricotta cheese
more noddles and the remaining sauce.
Bake uncovered,
on 350 degrees for about 45 minutes.
Remove from oven and place two provolone
pieces and an egg over each serving.
Adding some grated provelone cheese.
Place on oven under broiler to set eggs.
When eggs are set remove and serve.
