Hearts of Palm Salad

Here is a crisp and clean tasting salad.
The rice vinegar makes a light dressing.
And the ginger adds a splash of freshness.

Ingredients:
1 cup chopped hearts of palm
1/2 cup chopped celery
1 cup chopped cucumber
2 tablespoons rice vinegar
1 tablespoon olive oil
Salt to taste
Pepper to taste
1/4 cup crumbled feta cheese
1 teaspoon pickled ginger

Directions:
In large bowl,
combine all ingredients,
except feta, mix well.
Toss with feta, serve.
