As opposed to what, Unreal Eggplant Parmesan?
I had a small eggplant that I wanted to fry up
and descovered I didn't have any dry breadcrumbs.
No big deal I thought to myself and took a few
slices of bread, cut hem up and crumbed them
in my small food processor. Putting the crumbs
in a bowl it didn't look like enough to bread all
of the slices of eggplant, so I added some freshly
grated parmesan cheese, and still looked shy.so I got
one more bread slice,crumbed it up and was good to go.
I breaded the eggplant slices, cooked them in a
hot bath of olive oil and kept them warm in the oven.
At supper they were real good along with some
tomato sauce and more grated parmesan cheese.
Here is the recipe, I hope you have some breadcrumbs.
Ingredients:
1 medium size eggplant, sliced into 1/4" circles
1 egg, beaten
1/4 cup milk
1 cup Italian dried breadcrumbs
Olive Oil
2 cups Tomato Sauce
1/2 cup flour
Parmesan Cheese
Preheat oven to 200 degrees F.
Place the flour into a small bowl.
Place the breadcrumbs into another bowl.
Place the egg and milk into another bowl.
Dip one slice of eggplant into flour, cover all over.
Then dip into the eggwash and let drain,
and then dip into the bread crumbs.
Place the breaded eggplant on a baking rack to air dry.
Prepare a large saute pan by pouring about 1/4" of olive oil
in the bottom of the pan. Set the burner to medium heat
and wait until the oil is shimmering.
Working in batches, place the eggplant into hot oil
and fry until golden brown on both sides.
Place on paper towels to drain.
Keep warm in the preheated oven until ready to serve.
Serve with tomato sauce on the side,
and grated parmesan cheese.
These fried eggplant slices are now ready to assemble
an eggplant parmesan casserole if so desired.
