Honey Mustard Carrot Cole Slaw

I got tired of the same old cabbage cole slaw
and decided to try and make a slaw of carrots.
Sweet and spicy creamy and colorful.
Try this recipe for a change of pace.

Ingredients:
2 tablespoons of olive oil
1/3 cup red wine vinegar
1 tablespoon dijon mustard
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups grated carrot
1/4 cup chopped parsley
1/2 cup golden raisins

Directions:
Combine olive oil, vinegar, mustard
and salt and pepper in a small bowl.
In another medium sized bowl,
combine carrots, parsley and golden raisins.
Pour dressing over carrot mixture and toss.
Let chill for one hour.
Toss again before serving.
