Pugliese Fire Roasted
Fresh Chestnuts in Wine

Every year around the holidays my family would
do the roasted chestnuts on an open fire thing.
There's just somthing to say about getting
a bit or two of dried chestnut under your
finger nail trying to open up the roasted shell.
We roasted the chestnuts soaked in a pan of red wine.
Just a Christmas memory, like the christmas cookies.

Ingredients:
24 fresh chestnuts
1 cup red wine

Directions:
Cut a cross in each chestnut allowing
the steam to escape and the wine to
penetrate the shell while roasting.
Place the chestnuts on an aluminum plate
pour wine in and cover with foil.
Place on hot coals to cook for about
30 or 45 minutes deprnding on the heat.
Remove and un peel when cool enough.
