The citrus flavor blended with the
sweet potatoes will add a delicious,
and hardy side dish to your meal.
Ingredients:
4 medium sweet potatoes
3/4 Cup fresh orange juice
1/2 tsp. freshly grated orange rind
2 Tbsp. light brown sugar
Dash of ground cinnamon
1/4 Cup unsalted butter
Fresh oranges, garnish
Directions:
Peel sweet potatoes and cut into
length-wise wedges (about 8 per potato).
Mix the orange juice with the orange rind,
light brown sugar and the cinnamon.
Place the sweet potatoes in a lightly
greased baking dish and pour the
orange juice mixture over the potatoes.
Dot tops of the potatoes with the butter.
Bake, uncovered in a preheated 350 degree F.
oven about one hour, or until tender.
Baste occasionally throughout
the entire baking time.
To serve, arrange sweet potatoes
on a serving platter or dish
and drizzle with the glaze from
the bottom of the baking pan.
Garnish with fresh orange slices.
