Chopped Walnut Cookies

These are super good tasting.
You toast the walnuts before
adding them to the cookie dough.
Such great toasted walnut flavor.

Ingredients:
1 (8 ounce) can shelled walnuts
2 eggs
1 heaping cup light brown sugar
1 Tbsp. molasses
1/2 cup flour
1/4 tsp. baking powder
Pinch salt

Directions:
Toast walnuts in a dry saute pan
until browned and aromatic.
Heat oven to 350 degrees F.
Place walnuts in a food processor
and chop fine to your liking.
Beat eggs and add sugar and molasses.
Add flour and baking powder,
beating slightly until blended.
Add walnuts. Drop 1/2 teaspoon at a
time onto greased and floured pans.
Bake about 9 minutes.
Cookies should be chewy and soft
when removed from the oven.
They will harden slightly when cooled.
