Whenever I serve these tasty cutlets
there's a lot of ooh's and ah's at
the dinner table with eyes closed.
These cutlets are tender and moist
with a salty rich corned beef flavor.
Ingredients:
1 pound deli 1/4" sliced corned beef
1 cup all-purpose flour
1 tablespoon ground black pepper
1 tablespoon dry mustard
1 tablespoon smoked paprika
1 egg, wisked with 4 tablespoons milk
1 cup panko bread crumbs
canola oil for frying
lemon wedges for garnish
Directions:
Preheat a large saute pan.
In a mixing bowl combine flour,
pepper, mustard and smoked paprika.
Dredge corned beef in seasoned flour.
Then dip in egg wash mixture and
then in panko bread crumbs.
Add oil to saute pan and place
cutlets in hot oil to saute
just until browned both sides.
Remove, serve garnished with lemon.
