These aren't heavy cookies at all
in fact they're more like a sugar
shortbread cookie with oatmeal.
I added in chocolate just because.
Ingredients:
1 Cup unsalted butter
1 Cup packed brown sugar
1 Cup confectioner's sugar
1 teaspoon vanilla extract
2 Large eggs
2 Cup All-Purpose flour
2 1/2 Cups Oats powdered
1/2 teaspoon salt or to taste
1 teaspoon baking powder
4 Ounces melted choclate
1 1/2 Cups chopped walnuts
1 (12 oz.) pkg. Chocolate Chips
Directions:
Cream together butter and sugars.
Add eggs and vanilla extract.
Place oats in a food processor and
mix to make into a powder.
In a bowl, mix flour, powdered
oats, salt and baking powder.
Mix creamed and dry ingredients.
Add chocolate chips, chocolate and nuts.
Place dough golf ball size or smaller
on an ungreased cookie sheet.
Bake at 375 degrees F. for 8 minutes.
