Sweet Potatoes and Tart Apples

This sweet potatoe recipe is just
what I was looking for in making
a differant side dish for Thankgiving.
A good balance between sweet and sour,
with a good cruch from the pecan nuts.

Ingredients:
1/3 cup unsalted butter
1/4 cup water
2 tablespoons fresh orange juice
1 tablespoon stone ground mustard
1 tablespoon clover honey
1 teaspoon grated orange peel
1/4 teaspoon salt or to taste
1/8 to 1/4 teaspoon ground red pepper
2 large sweet potatoes, peel, cubed 1-inch
3 Granny Smith apples, cubed 1-inch
1/4 cup chopped pecans (optional)

Directions:
Heat oven to 375 degrees F.
Melt butter in 13x9-inch baking pan
in oven (2 to 4 minutes).
Stir in all remaining ingredients
except sweet potatoes, apples and pecans.
Place sweet potatoes in butter mixture;
toss to coat. Cover;
bake for 25 to 35 minutes or until fork tender.
Stir in apples and pecans.
Continue baking, uncovered, stirring once,
for 15 to 20 minutes or until apples are tender.
