Asian Sticky Rice Stuffing

Ingredients:
4 cups sticky (sushi) rice
1 tablespoon vegetable oil
2 large garlic cloves, peeled and minced
1 (1-inch) piece fresh ginger, peeled and minced
10 small fresh shiitake mushrooms,
stems removed, caps sliced into thin strips
1 small bunch cilantro, stems trimmed, chopped
1 teaspoon salt or to taste

Directions:
To prepare stuffing, cook rice in water
according to package directions.
When done, remove from pan and spread into
a thin layer on a large baking sheet to cool.
Heat oil in a small skillet over medium heat.
Add garlic and ginger and stir-fry
until golden, about 1 minute.
Transfer to a large bowl and mix
with rice, mushrooms, cilantro and salt.
Use as turkey stuffing. Makes about 8 cups.
