Drunken Ginned Carrots
Sloe Gin Carrots

I swear people don't believe that I
would cook fresh carrots in alcohol.
The carrots soak up the gin flavor
but none of the alcohol is in them.
This is a different kind of carrot
flavor that resembles anise a lot.

Ingredients:
4 fresh carrots, peeled
1 cup gin
1 teaspoon sugar

Directions:
After peeling carrots, keep peeling until
you have a pile of fresh carrot peels.
Place carrote in a pot, add gin and cover.
Heat to a simmer until carrots are tender,
tossing once or twice, add sugar if desired.
