Fried and Baked Fish Fillet

In this recipe you heat up a
skillet as hot as you can get it.
There's enough smoke while frying
this you just might be able to check
the batteries in your smoke alarm.
I have an outside exhaust fan so
the smoke goes out side my kitchen.

Ingredients:
White fish fillets, Cod is good
Flour for dredging fillets in
A few tablespoons oil for frying
Salt and pepper to taste

Directions:
Preheat oven to 350 degrees F.
Turn your exhaust fan on high
and open up your windows.
Heat a skillet to high heat.
Wash and pat dry fish fillets,
season with salt and pepper.
Add oil to hot pan and then
add fish fillets, sear and
let saute for 2 minutes.
Turn fish, cover skillet and
place in oven to finish cooking.
