Roast Beets and Sweet Potatoes

I bought some sweet potatoes and
some fresh beets that I thought
would last for a month on the counter.
Today I noticed the beets getting soft.
So I decided to roast them with the
sweet potatoes and I'm glad I did.
These roast up great and were a good
side dish with the pork chops I made.

Ingredients:
3 large beets, peeled and cut into chunks
3 medium sweet potatoes, cut into chunks
1 large white onion, cut in large pieces
4 cloves garlic, peeled and pressed
salt to taste
black pepper to taste
4 tablespoons olive oil

Directions:
Preheat oven to 375 degrees F.
Place sweet potatoes, beets and onion
in large bowl and add olive oil, garlic,
and salt and pepper to taste.
Mix in bowl to coat all over.
Place in a roasting pan and roast 1 hour
or until vegetables are tender.
