These jam shortbread cookies are really good.
I like black cherry jam and was pleasently surprised.
They came out of the oven melt in your mouth gooey good.
Ingrdients:
1 c. shortening
1/2 c. granulated sugar
1/2 c. brown sugar
2 eggs
3 tbsp. milk
2 tsp. vanilla
2 2/3 c. sifted all-purpose flour
2 tsp. cream of tartar
1 tsp. soda
1/2 tsp. salt
Your favorite preserves
Directions:
Cream shortening and sugars; beat in eggs, milk, and vanilla.
Sift together dry ingredients; add to creamed mixture. Chill 1 hour.
On well-floured surface, roll half the dough at a time to 1/8 inch thick; cut with 2-inch cutter; cut small hole in center of half.
Place 1/2 teaspoon preserves on each plain cookie;
top with cut out one; seal edges.
Bake on ungreased cookie sheet at 350 degrees for 10 to 12 minutes.
