Everybody wants to cut back on sugar and
at the same time not conprimise with taste.
here i came up with a really good oatmeal cookie.
it's got no fat and a lot less sugar than most.
Ingredients:
3/4 cup pastry flour, whole wheat plus 2 tablespoons
1/2 teaspoon baking soda
1/2 teaspoon salt optional
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup prune puree
2 tablespoons corn syrup, light
2 tablespoons vanilla extract
3/4 cup brown sugar well packed
1/4 cup sugar white
1 1/4 cups rolled oats quick or old fashioned,
toasted in oven until barely golden
Directions:
Preheat oven to 350 degrees F.
Toast 1 1/4 cup uncooked Oats (quick or old fashion), set aside.
Spray two cookie sheets with a thin film of vegetable oil.
Mix dry ingredients in one bowl.
Wet ingredients in another bowl.
Combine and mix all ingredients well.
Drop by spoonful onto cookie sheets.
Bake for approximately 9 minutes.
