Lunchtime Big Tuna Sandwhich

This is one of the best tuna sandwiches ever!

Ingredients:
5 12-oz cans solid white Albacore tuna
1 1/2 cups mayonnaise
1/2 cup mustard
3/4 cup sweet pickle relish
1 tablespoon black ground pepper
1 teaspoon salt (to taste)
1 handful cilantro, washed and chopped
2 carrots, finely diced
1 lime, juiced
2 loaves multi-grain bread
Lettuce leaves, washed
Fresh tomatoes, sliced
Red onion, thinly sliced
Avocado, sliced
Provolone cheese, sliced

Directions:
Open and drain tuna cans.
Place tuna into large mixing bowl and,
using a fork or knife, break up into small pieces.
In a separate small-medium bowl,
using a whisk, mix mayonnaise,
mustard and relish until an even consistency.
Then mix in salt and pepper to taste,
and add cilantro, carrots and lime juice & mix well.
Add mayonnaise mixture to broken
up tuna & stir to incorporate well.
Add some tuna to the slices of bread,
add your side platter favorites
and top off with tuna mixture.
