I went to the local grocery store looking to buy
a whole cut up chicken to make chicken soup with.
They didn't have whole cut up chicken in one package
but had chicken parts in small packages.
I bought some legs, thighs and wings.
For about three dollars I got cut up chicken parts
ready for me to make some home made chicken soup.
Ingredients:
whole chicken cut up, or parts
water
1 carrot, peeled and sliced
2 stalk(s) celery, ends trimmed, sliced
1 onion, peeled and sliced
2 clove(s) garlic, peeled and crushed
2 bay leafs
2 tablespoon(s) unsalted butter
1 teaspoon salt
1 teaspoon fresh-ground pepper
3 cup(s) (5 ounces) medium egg noodles, cooked
Olive oil
Directions:
Place olive oil in a big pot.
Add cut up onions,celery,carrots and garlic.
Cook for a few minutes on high to get things going.
Add water to cover and stir.
Add seasonings and bay leaves.
Cook for five minutes on high.
Add chicken and lower heat to a simmer.
Simmer about 1 1/4 hours,skimming the surface periodically.
Remove the chicken and place in a large bowl.
Strain the broth if desired.
Remove and discard the skin and bones from the chicken,
cut meat into 1/2-inch pieces and place in soup.
Stir in the egg noodles and parsley and cook
until the noodles are tender about 10 more minutes.
Serve hot.
