I like to try out different ways of cooking things
and one day came up with the idea of cooking soup inside
a whole tomato while it was roasting in the oven.
This is very good served with a chunk of fresh bread.
Ingredients:
4 large tomatoes
1 can cream of tomato soup
2 tablespoons fresh basil leaves, chopped
2 tablespoons red onion,chopped
1 teaspoon dried basil
Directions:
Preheat oven to 350 degrees F.
Cut the top off of the tomatoes
like your making a jack-o-lantern.
scoop out the inside being carful
not to pirce the bottom or sides.
In a bowl combine soup onion, and dried basil.
Pour into tomato and place tomatoes
in a glass baking dish.
Bake for 30 minutes or until tomatoes
start to wilt and soup is heated through.
Serve garnished with fresh basil on top.
