Shinkinfleckle is a dish made of left over meat.
years ago they used beef and even buffalo.
Left over cooked ham is just great in this dish.
Ingredients:
1 pound wide egg noodles
3 cups diced meat
24 ozs. sour cream
1/2 tsp salt
1/2 tsp pepper
2 eggs well beaten
1 can small green peas
2 tbs butter
1/4 cup seasoned bread crumbs
a dash of paprika for color
Directions:
Fully cook egg noodles drain well,
mix in sour cream (mix well),
add salt and pepper and diced ham, mix well,
stir in beaten eggs([its all right if eggs start to cook),
mix well, add can of peas, stir well.
Pour into a baking pan so that
mixture is approx. 2 inches thick.
Top with 4 1/4 inch thick pats of butter,
top with thin layer of bread crumbs
and sprinkle with paprika.
Bake 30 to 40 minutes at 350 degrees F.
or until top gets slightly crunchy.
