Soft Boiled Eggs on Toast

I blew the dust off my recipe books and found
this comfort food for breakfast or brunch.
I love eggs and this one is a classic.
Buttered along with a hot cup of coffee.

Ingredients:
2 slices country fresh white bread
1-2 tablespoos unsalted butter
2 large eggs

Directions:
Place eggs in pan,
fill with water to just cover eggs,
and bring to a boil over high heat.
Cover the pan, turn off the heat,
and let the eggs sit for five minutes.
Using a spoon, remove eggs from the water.
Toast bread and plate, butter toast and
crack one egg onto each slice of toast.
Serve warm.
