Some people ask me what is the best recipe for
cooking a pork tenderloin and should they
roast it with the cover on or uncovered.
And what is the best temperature to ensure
a nicely browned and juicy roast of pork.
I like to place some vegetables in the bottom
of a roasting pan just big enough to hold roast.
Add liquid to the bottom to keep things moist.
Place roast on top of vegetables, fat side up.
Roast in a slow 300 degree F. oven covered.
Cook for a good three hours, uncovering the
last twenty minutes to ensure a brown crust.
Ingredients:
1 pork loin roast (3 lb.)
3 potatoes, peeled and quartered
2 carrots, peeled and cut large
1 onion, peeled and quartered
1/4 cup water
1/2 teaspoon gravy master or liquid bouquet
1 teaspoon garlic powder
1 teaspoon black pepper
salt to taste.
Directions:
Preheat oven to 300 degrees F.
Place vegetables in a roasting pan
put pork loin roast on top of the
vegetables fat side up.
Score the fat in diamond pattern.
Season with salt,pepper and garlic.
Cover and place it in oven,cooking
at least 3 hours,until the internal
temperature of the roast reaches 155 F.
Let the pork roast rest for 10 minutes
out of the oven before cutting.
Serve along with vegetables.
Make sure the carrots are done,
they take the longest to cook.
