Oven Roasted
Roma Tomatoes

With the garden over flowing with red
ripe tomatoes I made these roasted
Roma beauties with garlic and olive oil,
nothing could be easier and more delicious.
They end up swimming in a pool of flavor.

Ingredients:
20 ripe roma tomatoes
1/4 cup olive oil
6 garlic cloves, peeled

Directions:
Preheat oven to 425 Degrees F.
Wash and pat dry tomatoes.
Place in a small roasting pan and
drizzle with olive oil.
(Do not add any water).
Drop garlic cloves around tomatoes,
cover and bake for about 45 minutes
or until tomatoes are soft and
shriveled to tomato perfection.
