This is one of my favorite recipes
and is by far one of the very best
eggplant recipes I've ever done.
The combination of the gorgonzola
cheese and the fried eggplant in oil
is one fantastic tasting experience.
Ingredients:
Olive oil
1 eggplant, sliced 1/4"
2 tablespoon olive oil
1 cup flour
2 eggs, lightly beaten
1/2 cup milk
1 cup Italian dry bread crumbs
salt to taste
1 medium onion, peeled and sliced
2 tomatoes, sliced
1 cup grated Parmesan cheese
1 cup crumbled gorgonzola cheese
Directions:
Preheat oven to 375 degrees F.
Coat bottom of baking dish with olive oil.
Heat the oil in a skillet over medium heat.
Place flour in a dinner plate.
Wisk eggs and milk in a bowl,
Place bread crumbs in a separate bowl.
Dredge eggplant slices in flour then
dip in egg wash to coat both sides,
then dredge in bread crumbs to coat.
Fry breaded eggplant slices in
the skillet until golden brown.
Add more oil if needed,
being careful not to burn.
Drain on paper towels, season with salt.
In baking dish, layer eggplant, onion,
tomatoes, Parmesan and gorgonzola cheeses.
Bake 30 minutes in the preheated oven,
until cheese is melted and bubbly.
