Shwan's Eggplant Pizza

Of course Shwan's doesn't offer
for sale an eggplant pizza,
I simply use one of their frozen
pizzas and add on a few slices
of fresh eggplant and I'm in
eggplant pizza heaven so to speak.

Ingredients:
1 Shwan's frozen pizza,
I used Supreme pepperoni
2 thin slices of eggplant,
quartered into eight pieces
some olive oil in the spray can
some dried oregano
6 cherry tomatoes

Directions:
Preheat oven to 425 degres F.
Unwrap pizza from plastic wrapping
and place on a baking sheet.
Arrange tomatoes and eggplant
around top of pizza.
Spray eggplant with olive oil.
Sprinkle with dried oregano.
Bake until done, mine took
about 20 minutes or so.
Cut into slices and serve.
