Oven Roasted Sweet Potatoes

If you prefer, you can broil these instead of baking them.
They take 10 to 15 minutes under the broiler,
but watch them carefully that they don't burn
and turn them in the roasting pan often.
These can be prepared ahead and reheated.

Ingredients:
2 pounds sweet potatoes
2 cloves garlic, peeled and minced
1 teaspoon salt, or to taste
1 tablespoon cumin
2 tablespoons olive oil
2 tablespoons lemon juice
Fresh ground black pepper, to taste

Directions:
Preheat oven to 400 degrees F.
Peel and cut potatoes into 1/2-inch cubes.
Place in a large bowl or zip-seal plastic bag.
Combine garlic and salt;
mix into a paste with a wooden spoon
or use a mortar and pestle.
In a small bowl, combine the garlic paste with cumin,
olive oil, lemon juice and pepper.
Add to the potatoes and toss to coat evenly.
Transfer potato chunks to a baking pan with sides.
Bake 30 minutes.
