One of my very favorite fooda are fresh mussels.
Today's mussels are farm raised and easy to prepare,
Grilled buttery garlic bread and a crisp green salad
and a cold beer go just fine with these mussels.
Ingredients:
Sauce:
3 large tomatoes, chopped, with juices
3 tablespoons extra-virgin olive oil
1/4 cup chopped fresh cilantro
1/4 cup capers, with liquid
2 pounds (45 to 50) medium mussels
Directions:
To make the sauce:
In a bowl, toss the tomatoes and their
juices with the oil, cilantro, and capers.
Discard any cracked mussels or any that are
open and do not close when lightly tapped.
Preheat a gas grill on high
or light a fire in a charcoal grill.
Arrange mussels in a wok and top of the heated grill
Cover and cook for 4 to 5 minutes,
or until the mussels open.
Discard any that do not open.
Transfer the mussels to a platter.
Sprinkle the mussels with the sauce and serve.
