My Version of Waldof Salad

This has been done a thousand times.
Here in my version of Waldorf salad.
What I do really like is the mayonnaise
clinking upon the crispy lettuce.

Ingredients:
2 cups romaine lettuce
1 apple ( Macintosh )
some celery
some carrot
1 juicy tomato
some mushrooms ( fresh )
olives if you have them

Directions:
In a large bowl add mayonnaise,
some red wine vinegar, and some garlic.
Some sugar and some salt and black pepper.
Add in the mixed vegetables add stir good.
Cover with plastic wrap and refrigerate.
I serve this with any pasta dish.
Fresh bread on the side.

Banana Pancakes

Banana Pancakes are easy to bake. Some times I add some mix to this. 2 eggs and one banana for two people. They get dark in the pan so be careful and they love maple syrup and butter.
Ingredients: 2 eggs 1 banana 2 tablespoons pancake mix 1 teaspoon vanilla
Directions: Place eggs in a bowl and scramble them, add the vanilla and banana, using mix. Pour into a medium size skillet. Turn when done and serve with syrup.

Gorton's Fish in the Oven

This is my secret recipe for Gordon's
Fish Sticks and Fillets in the Oven.
I didn't like the oven crunch of fillets,
they got very crunchy in the oven and
wanted a softer and easier fish fillet.
The end result is amazing cooking.

Ingredients:
5 Gorton's fish fillets, per serving
fish style cod steaks one each serving
a few frozen steak fries potatoes
just a few frozen broccoli
some unsalted butter
some bread crumbs

directions:
Turn oven on to 400 degrees.
Place the fish fillets on bottom on pan.
Place one fish fillet on each sticks.
Place some potatoes and broccoli.
Put on butter and bread crumbs on fish.
Bake for 45 minutes, serve warm.

Oven Chicken Thighs
with Egg and Flour Mixture

I had a few chicken thighs and used them here.
Adding pepper and Old Bay Spice with flour,
then adding in a egg, mustard and bbq sauce,
and dredging again in flour mixture.
Placed into oven for an hour, delicious.

Ingredients:
4 chicken thighs with skin on
1 cup flour
1 teaspoon pepper
1/2 teaspoon Old Bay Seasoning
1 egg
1 teaspoon mustard
1 teaspoon bbq sauce
2 tablespoons oil for frying

Preheat oven to 400 degrees.
In a bowl add flour, pepper and old bay.
In another bowl add egg, mustard and bbq sauce.
Take a chicken thigh dredging it in flour mixture
then place it in egg and another flour mixture.
Place in a roasting pan with cooking oil, cover
and bake for 30 minutes,then turn thighs over,
bake for another 30 minutes until done.
