Tomato Pasta Sauce

Having a few fresh tomatoes on the counter
just invited for me to make a pasta sauce.
Starting with olive oil and garlic cloves,
ending in a pretty good tasting dinner.

Ingredients:
1 tablespoon olive oil
2 fresh garlic cloves
dash of dried thyme
dash of dried rosemary
dash of ground black pepper
dash of salt
2 large fresh tomatoes
1 cup jarred tomato sauce
2 cups canned crushed tomatoes
1 cup cold water
1 small hot chili pepper

Directions:
Place olive oil in a soup pot on low ,
peel, chop garlic and place in oil to
heat but not enough to brown or burn.
Add in dried seasonings, water and salt.
Chop up fresh tomatoes and add to pot.
Stir and add in crushed tomatoes,
and chili pepper to simmer for 1 hour.
Use on any cooked pasta as desired.



Plain Grilled Asparagus Spears

I grilled some fresh asparagus as a side dish.
They get soft with some brown char on them.
Served with a drizzle of olive oil and salt.

Ingredients:
fresh asparagus
Olive oil
Salt to taste
Directions:
Place fresh asparagus on a grill and cook
for only about 4 minutes or so, turning
over to char some on all sides.
Remove, drizzle with oil and salt.

Flour Tortilla Cinnamon Crisps

Using a Cuisinart Griddle/Grill makes this easy.
Take one ten inch flour tortilla and grill it up.
Remove when warm and sprinkle with as much
cinnamon sugar as you wish, then slice up and serve.

Black Banana Cinnamon Cake

Use really ripened bananas to bake a cake
rich in banana flavor with chocolate chips.
This is good served with vanilla ice cream.

Ingredients:
Vegetable shortening for pan
1/2 stick unsalted butter
1/2 cup brown sugar
2 large eggs, beaten
1 teaspoon vanilla extract
4 really ripe bananas
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chocolate chips
Cinnamon sugar for topping

Directions:
Preheat oven to 350 degrees F.
Grease bottom and sides of a baking pan.
In a bowl combine flour, baking powder, salt
baking soda and set aside.
In a mixing bowl cream together the butter
and sugar then add in the eggs and vanilla.
Beat in the banana and add in the flour mixture.
to make a wet batter, stir in chocolate chips, then
pour banana chocolate chip batter in baking dish.
Sprinkle top when cinnamon sugar to taste.
Bake uncovered for about one hour.
Remove to cool 15 minutes before serving.



Eggplant Parmesan For Two

I made this in dish about 40 minutes,
using slices of fried breaded eggplant,
some plain old jarred tomato sauce,
a cup of ricotta cheese and a handful
of shredded mozzarella cheese on top.
It's a good tasting meal that bakes up fast.
With just enough left over for sandwiches.

Ingredients:
1 tablespoon olive oil
12 eggplant slices, breaded and fried
1 cup tomato sauce
1 cup ricotta cheese
1 cup shredded mozzarella
a dash of dried oregano

Directions:
Preheat oven to 350 degrees F.
Drizzle bottom of a 8 inch baking dish with
olive oil and spread about 4 tablespoons of
tomato sauce in the baking dish.
Arrange four slices prepared eggplant
side by side in dish, then a tablespoon of
ricotta cheese on each eggplant slice.
Sprinkle with grated parmesan cheese.
Place four more eggplant slices, more ricotta
and some more tomato sauce on top.
Another layer of eggplant, ricotta and parmesan.
Top with tomato sauce making sure to cover all
of the top of the eggplant slices, sprinkle top with
Shredded mozzarella and season with oregano.
Bake dish covered for about 30 minutes then
remove cover to brown cheese on top just a little bit.
Remove and allow to cool 15 minutes before serving.

Corned Beef Pizza

With sliced cooked cabbage and white potatoes.
This pizza is a taste treat any time of the year,
serve this on Saint Patrick's day to cheers.
Along with at least a pint or two of dark ale.
Ingredients:
1 pizza dough, 16 inch
2 cups cooked cabbage, sliced
2 cups cooked corned beef, sliced
2 cups cooked white potatoes, sliced
6 slices deli provolone cheese
1 tablespoon prepared horseradish
1 tablespoon prepared brown mustard

Directions:
Preheat oven or grill to high heat.
Stretch pizza dough out and top with
cooked cabbage, beef and potatoes.
Top with cheese and bake until done.
Serve with horseradish and mustard.







Corned Beef & Swiss on Rye

This sandwich is screaming to be Panini grill toasted.
Serve this with your favorite flavored potato chips.
I also like this with a whole dill pickle on the side.

Ingredients:
2 slices Jewish rye bread
2 slices cooked corned beef
2 slices Swiss cheese
1 tablespoon prepared mustard
1 teaspoon prepared mayonnaise

Directions:
Place a whole dill pickle on a plate.
Slather two rye bread slices with mustard
and as much horseradish as you desire to.
Place sliced corned beef on bread and close
to create a nice Jewish style corned beef sandwich.
Brown and heat up in a Panini press or eat as is.






Haagan Das Baked Alaska

A base of Fig Newton's covered by
the creamy Haagan Das coffee ice cream.
Covered with egg meringue and toasted coconut.
This is one dessert just made to impress guests.
This will serve four as a dessert, or one in my case.

Ingredients:
6 Fig Newton Cookies
1 pint Haagan Das coffee ice cream
6 large egg whites, whipped
1/4 cup confectioner's sugar
1/2 cup flaked dried coconut
Sprinkle of salt or to taste

Directions:
Arrange Fig Cookies together on a plate.
Top with the entire pint of ice cream.
Place in freezer to keep cold and frozen.
Whip egg whites into a meringue, add sugar.
Spread meringue all over ice cream on plate.
Sprinkle with coconut and bake for 5 minutes.
Or until meringue and coconut is toasted brown.





Simple Cooked White Potatoes

Creamy good and cooked to perfection.
These are easy to prepare and go along
with roast chicken, beef, lamb or fish.

6 white potatoes, peeled
1 teaspoon salt and cold water.
Bring to a simmer for 30 minutes.


Corned Beef & Cabbage Dinner

Today I cooked up a corned beef brisket.
With cabbage, carrots and potatoes.
This is an easy cold weather meal to make.
Served with horseradish and mustard.

Ingredients:
1 corned beef brisket
6 cups cold water
1/2 head fresh cabbage
4 white potatoes
2 large fresh carrots
4 cups cold water
Prepared horseradish
Prepared mustard

Directions:
Remove corned beef from package
and place into a large soup pot.
Cover with cold water and bring to
a simmer for about three hours.
In another soup pot place carrots,
cabbage and potatoes with water.
Serve cooked corned beef along with
cooked vegetables, horseradish/mustard.

Steak Cooked on Cuisinart Griddler

I purchased an indoor grill to give me
the flexibility to grill in cold weather.
I've cooked sandwiches and melts
with good results and decided to
grill up a steak to see how it does.
A NY Strip out to room temp,
used the bottom and top panini grill
and overcooked the steak just a bit.
Now I'll know not to cook it so long.

Ingredients:
1 NY strip steak
1/4 teaspoon ground black pepper
1/4 teaspoon salt or to taste
Directions:
Bring steak to room temperature.
Preheat Cuisinart Griddle / Grill.
I did this on high searing heat.
Season steak and place on griddle.
Close top and cook for about two minutes.
Turn steak to change grill mark directions.
Close cover and cook for about two minutes.
Remove steak to rest for 6 minutes before serving.
This should make close to a medium rare steak.
I also cooked up some onions and mushrooms in a
saute pan with butter on the side to serve with this.

Pepperoni Pizza with Eggplant

Frozen Pizza has come a long way since the
first red painted card board tasting ones.
I add on some dried oregano and about
a half of a freshly diced up eggplant.
The eggplant gets all creamy good while
just starting to brown around the edges.

Ingredients:
1 frozen pizza
1 tablespoon dried oregano
2 cups diced eggplant

Directons:
Preheat oven to 375 degrees F.
Remove pizza from wrappings and
season with dried oregano to taste.
Arrange diced eggplant all over top.
Bake directly on rack in preheated oven.
Remove when done, about 20 minutes later.

Fresh Avocado Appetizer Dip

If you like fresh avocados as much as I do
you might just want to sit down right now.
Before you fall down from this one.
Mix this up and take the credit for taste.

Ingredients:
Fresh avocados
Cherry tomatoes
Fresh lemon juice
salt and black pepper<>
ground cumin
ground cocoa powder
ground allspice
ground brown sugar

Directions:
Peel, chop and mix in the spices.

Baked Pork Ribs Dinner

Nothing could be easier to make.
Country style pork ribs baked to
juicy perfection with vegetables.

Ingredients:
4 country style pork ribs, frozen
4 potatoes, halved
2 large carrots, peeled
4 garlic cloves, peeled
salt and black pepper

Directions:
Preheat oven to 400 degrees F.
Place in a dry roasting pan the carrots,
potatoes, onions and garlic cloves.
Season with salt and ground pepper.
No need to add in any water or broth.
Place the frozen pork ribs on top of
vegetables in pan and season ribs.
Cover and bake for 90 minutes.
The ribs will be about 130 degrees F.
The vegetables nice and fork tender.
There will be about 1/4 inch of liquid
on the bottom of the roasting pan.

Chicken Rice & Bean Soup

Fresh kale and Carrots make this soup Colorful.
Chicken and beans make this soup tasty good.
This is a hearty soup good for cold weather
that is easily made with a rotisserie chicken.

Ingredients:
6 cups cold water
2 carrots, peeled and sliced
1 onion, peeled and sliced
2 celery stalks, sliced
1 teaspoon ground black pepper
2 cups cooked chicken, shredded
dash of dried thyme
dash of dried rosemary
dash of salt
dash of garlic powder
2 cups fresh kale, chopped
1 cup orzo pasta, uncooked
1 cup white rice, uncooked
1 can white beans, with juice
4 cherry tomatoes, quartered
Directions:
Place all ingredients in a slow cooker
to cook on low heat for about 8 hours.

Bacon Wrapped Eggplant Sandwiches

Genoa Salami, Provelone Cheese and Fresh Kale.
Baked between eggplant slices that are wrapped
with smoked bacon for a tasty Italian sandwich.

Ingredients:
1 eggplant
Genoa or Hard Salami
Provelone cheese, sliced
fresh kale,
fresh basil leaves
fresh tomato, sliced
sliced smoked bacon
All purpose flour
2 large eggs
1/4 cup milk
Italian breadcrumbs
Olive oil

Cut ends off eggplant and into 1/4" slices.
Arrange slices on a work surface and place
a slice of provelone cheese on each slice.
Place a slice of salami on top, then tomato
and a slice of fresh kale and fresh basil.
Make a sandwich with eggplant slices,
with salami, cheese and filling in the middle.
Dredge eggplant sandwich in flour, then egg wash
and finally in breadcrumbs to coat all over.
Wrap each eggplant sandwich with a slice of
bacon, securing it with a toothpick as needed.
Saute in a pan with olive oil or bake as desired.
Place on a baking sheet and bake for about
20 minutes, turning to brown both sides.

Jiffy Mix Mini Donuts

Using a Mini Donut Baking Machine,
one box of Jiffy Muffin mix makes
about 24 delicious tasting donuts.
Frost these but they're good plain.

Ingredients:
1 box Jiffy Muffin mix
1/4 cup water or milk
1 large egg, beaten
1 tablespoon sugar
2 tablespoons vegetable oil

Preheat mini donut maker.
In a bowl combine egg, mix,
vegetable oil, water and sugar.
Pout one tablespoon batter in
each donut cup and close top.
Bake for about 2 minutes,
open and carefully remove donuts.
Let cool before serving.

Yogurt Pizza Dough

Plain Greek yogurt in place of the yeast.
Chewy crispy dough and good tasting.
Top with your favorite ingredients.

Ingredients:
1 cup warm water
1-1/2 cups flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt

Directions:
Preheat oven to 500 degrees F.
In a mixing bowl combine water, flour,
baking powder and salt to form a dough.
Knead it on a floured work surface for about
8 minutes adding more flour as needed.
Form dough into desired shape and add on
tomato sauce and desired topping ingredients.
Place on a baking sheet and place in hot oven
to bake for 10 minutes or until done to your liking.

Baked Chicken Leg Quarters

Cooked on fresh carrots and onions
to a crispy skinned tender perfection.
Served on cooked thin spaghetti.

Ingredients:
4 chicken leg quarters
2 large fresh carrots
2 large yellow onions
salt, pepper and herbs
olive oil

Directions:
Preheat oven to 350 degrees F.
Coat bottom of a roasting pan in oil.
Peel carrots, cut up and place in pan.
Peel onions, cut up and place in pan.
Place chicken legs on top of carrots,
season, cover and bake for 1 hour.
Uncover and drizzle chicken with oil.
Place uncovered under the broiler to
brown and crisp up the chicken skin.
Remove and serve on cooked pasta.

Basic Beef Stew

The secret is in using some fresh tomatoes.
They brighten the taste of this beef stew
and really make the tomato flavor shine.

Ingredients:
2 tablespoons olive oil
1 pound beef chuck stew meat
1 onion, peeled and sliced
2 celery stalks, chopped
2 garlic cloves, peeled and minced
1 can crushed tomatoes
6 fresh Roma tomatoes
2 cups water
Italian seasonings and salt

Directions:
In a soup pot place olive oil,
chopped onions, garlic and celery.
Add in the beef, tomatoes and water.
Season with Italian dried herbs to taste.
Simmer two hours until beef is tender.
Serve with grated cheese.



Leftover Beef Tomato Sauce

This is a meat sauce that's good to
serve with pasta and use on a pizza.
A good way to use up left over
roast and cooked ground beef.
I used a lot of two's in this.

Ingredients:
2 tablespoons olive oil
2 onions, peeled and chopped
2 cloves garlic, peeled and minced
2 celery stalks, chopped
2 cups water
2 tablespoons sugar
2 cups crushed tomatoes
2 cups beef, chopped

Directions
Add oil and onions to a sauce pan,
stir to cook on high heat for a few
minutes to brown a little bit.
Add in garlic, celery and water.
Season with sugar, salt and pepper.
Add in crushed tomatoes and beef.
lower heat and simmer about one hour.
Add in more water if needed.




Crock Pot Baked Potatoes

Cooking potatoes in a slow cooker is
another way to bake them perfectly.
Leaving the oven for the roast turkey.

Ingredients:
10 Russet potatoes
2 tablespoons olive oil
2 tablespoons salt
2 tablespoons ground pepper

Directions:
Wash and rinse potatoes.
Rub oil all over potatoes.
Season with salt and ground pepper.
Wrap each potato with aluminum foil.
Place in a Slow Cooker or large Crock Pot
and cook on low for 8 hours or high for 4 hours.
Remove potatoes from aluminum  foil and
serve with sour cream, butter and dried chives.

Fast & Easy Cheese Pizza

Using quick rise yeast makes this Fast,
a Kitchen Aide Mixer makes this Easy.
Fifteen minutes from start to the oven.
Twenty minutes later and your eating.

Ingredients:
1 cup warm water
1 tablespoon sugar
1 tablespoon olive oil
1 packet instant rise yeast
2-1/2 cups flour
1/2 teaspoon salt
1 cup pizza sauce
8 ounces mozzarella cheese, shredded
1 tablespoon dried oregano

Directions:
Preheat oven to 450 degrees F.
Place warm water (110 degrees F.)
in a bowl of Kitchen Aide mixer.
Stir in sugar and olive oil along with
the packet of instant rise yeast.
Let proof about 5 minutes then
using the dough hook attachment,
add in flour a little at a time until incorporated.
Let mixer kneed dough 2 minutes then stop,
scrape down sides of mixing bowl.
Turn dough around to make a dough ball.
Cover and let rise 5 minutes or so.
Turn out onto a floured board and knead
forming into a pizza dough to your liking.
Place dough on a baking sheet and finish forming.
Spread with pizza sauce and mozzarella cheese.
Season with dried oregano and bake for 5 minutes.
Reduce oven temperature to 350 degrees F.
Bake another 15 minutes or until crust is done.
remove and slice into serving size pieces.

Pie Poached Apple

Baked apple pie without the crust.
Stuffed with spices and poached
before finishing in a microwave.

Ingredients:
cold water
4 Golden Delicious apples
4 teaspoons brown sugar
4 teaspoons butter
4 dashes ground cinnamon
4 dashes ground cloves
4 dashes salt

Directions:
Cut 1/4" of the tops off the apples.
Remove the apple core and seeds.
Stuff apples with butter and spices.
Place apple tops back on the apples.
Place the apples in a sauce pan and
fill the pan up with water 3/4 up the apples.
Remove apples and place the pan of water
on high heat and bring to a boil, turn off heat.
Place filled apples in water and allow to simmer
for 15 minutes, then remove apples to a plate.
Cover apples on plate with plastic wrap.
Place apples in microwave and cook on high
for about 5 minutes, then remove to cool.
Serve

Mini Donut Maker Recipe

I made good tasting plain mini donuts
using an electric mini donut maker.
I like the taste of the ground cloves.
Simply dusted with cinnamon sugar.
You could glaze or frost them too.
This made about 20 mimi donuts.

Ingredients:
1/2 cup water or milk
1 egg, beaten
1/8 cup vegetable oil
1/2 cup pancake mix
2 tablespoons flour
2 tablespoons sugar
1/4 teaspoon baking powder
dash of ground cloves
dash of salt
cinnamon sugar for dusting

Directions:
Preheat mini donut maker
In a mixing bowl combine water,
beaten egg and vegetable oil.
Add in pancake mix, flour, sugar
baking powder, cloves and salt.
Mix well to make a donut batter.
Carefully pour by teaspoonful into
mini donut maker and close lid.
Let bake for about 3 minutes,
open and use a fork to remove donuts.
Sprinkle while hot with cinnamon sugar.

Green Scallion Mashed Potatoes

Made with cream cheese and chives.
This is one potato dish sure to please.

Ingredients:
8 potatoes
6 cups cold water
1/2 teaspoon salt for boiling in
4 ounces cream cheese
4 tablespoons butter
1/2 cup chopped fresh scallions
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:
Wash, peel and cut potatoes in quarters.
Place in a soup pot and cover with water.
Season water in pot with salt and bring to a boil.
Reduce heat to simmer for about 20 minutes.
Drain and add in butter, cream cheese and chives.
Mash with a potato masher and then add in scallions.
Season with additional salt and black pepper to taste.



Salami Appetizers

Filled with cream cheese and hot peppers.
Amazing tasting rolled up salami slices.
Your going to want to make a lot of these.

Ingredients:,br>
1 pound sliced Genoa salami
8 ounces cream cheese, softened
hot chili peppers to taste

Directions:
Fill each slice of salami with some
cream cheese and a bit of hot pepper.
Roll salami into a neat package, serve

Honey Mustard Broccoli

Steamed broccoli in a creamy sweet cheese sauce.
Tender with just a touch of honey and parmesan.

1 bag frozen broccoli
2 tablespoons honey
2 tablespoons grated cheese
salt and pepper to taste

Directions:
Place broccoli, honey and grated cheese in a
microwave safe bowl and heat on high setting.
For about 4 minutes then remove, season and serve.

Egg Noodles and Cabbage

Haluski can be made using butter or bacon.
with sauteed fresh cabbage and onions.

Ingredients:
1/2 head cabbage chopped
2 onions, peeled and chopped
1 stick unsalted butter
1/2 pound cooked egg noodles
2 teaspoon brown sugar
salt and black pepper to taste

Directions:
Saute cabbage, onions and cooked noodles
in a large pan until heated through and serve.

Best Ever Banana Muffins

These are blue ribbon award winning muffins.
You get intense banana flavor not only in using
banana flavored yogurt but also frozen bananas.

Ingredients:
Topping:
1 cup flour
1 cup brown sugar
8 tablespoons butter

Muffin batter:
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1 stick unsalted butter, softened
2 eggs, beaten
3 ripe bananas, mashed
1/4 cup banana flavored yogurt

Directions:
Place bananas in freezer for two hours.
In a bowl make crumb topping by mixing
flour, brown sugar and butter into crumbs.
Set crumb topping aside with making batter.
Put frozen peeled banana pulp in a strainer
and let the water drain from the bananas.
Preheat oven to 350 degrees F.
In a mixing bowl combine the flour, baking soda,
salt, sugar, butter, eggs, mashed bananas and yogurt.
Fill muffin cups 3/4 the way up and sprinkle with topping.
Bake 40 minutes or until a toothpick comes out clean.


  1. Preheat oven to 350°.
  2. Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.
  3. Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.


Yogurt Waffles

Light soft and fluffy good waffles.
The yogurt takes place of any milk,
adding a pleasant tangy taste.
Just a tiny bit sugar sweetened.
These are easy to make in minutes.
Pour over the maple syrup and enjoy.
This made three fluffy six inch waffles.

Ingredients:
1 large egg
1/4 cup plain yogurt
2 tablespoons vegetable oil
1 teaspoon sugar
dash of salt
1/4 cup pancake mix

Directions:
Preheat waffle iron.
Whisk together the egg, yogurt
oil, sugar, salt and pancake mix.
Pour 4 tablespoons batter on waffle iron.
Let cook about 3 minutes or until browned.
Remove and keep warm while making others.
Serve with powdered sugar, butter and syrup.

Roast Beef Horseradish Appetizers

I've made this with my own roast beef,
also had good results with deli meat.
Simply slice 1/4" thick and your good.
Place on a tray with prepared horseradish
sauce to serve right at room temperature.

Ingredients:
1 pound deli sliced roast beef
1/4 cup prepared horseradish

Directions:
Purchase deli sliced roast beef and
tell them to slice the beef about  1/4" thick.
Cut int serving size pieces and serve with
as much hot horseradish sauce as you wish.
A supply of toothpicks is a good thing.


Easy Tomato Gravy Sauce

Use this easy to make sauce on pizza,
with some cooked pasta or fried dough.

Ingredients:
1 ( 6 ounce) can tomato paste
2 cups cold water
2 tablespoons olive oil
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon cayenne pepper

Directions:
In a microwave safe mixing bowl stir to combine
tomato paste, water, oil, sugar, salt, oregano
and just enough cayenne to create a little heat.
Place in microwave on high for 2 minutes.
Stir and allow to cool 1 minute before using.



Fresh Apple Fritters

Apple chunks in a pancake mix batter
that are deep fried to a golden brown.
Best served warm with maple syrup.

Ingredients:
1 Golden Delicious Apple
1 cup pancake mix
1 egg
2 tablespoons vegetable oil
4 tablespoons milk
oil for deep frying

Directions:
Peel apple, slice and place in a mixing bowl
along with pancake mix, oil, egg and milk.
Preheat frying oil to 360 degrees F.
drop apple fritter batter by tablespoons
into hot oil to fry until golden brown.

Freezing Chili Dogs

These are good to have in the freezer
for a quick lunch or snack anytime.
Just a minute in the microwave and
your good to go with a chili dog.

Ingredients:
8 beef hot dogs
8 hot dog buns:
2 cups ground beef chili sauce

Directions:
Remove hot dogs from package and
using a knife score them crosswise.
Place hot dogs in a with enough
water to just cover the hot dogs.
Bring to a boil and drain water.
Pour a few drops of vegetable oil in
pan to brown dogs a little, then remove.
Open up the hot dog buns, fill with some chili.
Place a hot dog on each bun and wrap in
plastic wrap to seal all around chili dog.
Place wrapped chili dogs in a plastic bag.
Freeze until ready to use for about four months.

Roast Frozen Steak

Take a frozen London Broil Steak,
Roast it on top of whole potatoes
into an incredibly tender and tasty
cut of beef with roasted potatoes.

Ingredients:
1 London Broil Steak
6 whole potatoes
salt and black pepper
dried herbs to taste

Directions:
Preheat oven to 425 degrees F.
Place whole potatoes in a dry roasting pan.
Place frozen steak on top of potatoes.
Season with salt, pepper and herbs.
Cover and bake for about 2 hours.
Until beef is fork tender and potatoes done.

Green Chili Brownies

Green chili peppers and chocolate brownies.
A match made in spicy pepper hot heaven.
Try this flavor twist to surprise your guests.

Ingredients:
1 box brownie mix
2 cans chopped green chilis

Directions:
Prepare brownie mix as directed and add
in the green chili peppers before baking.


Shrimp in Cocktail Sauce

Tiny cooked shrimp in a tomato sauce
spiked up with peppery horseradish.
Like the ones sold in small glass jars.

Ingredients:
1 pound cooked shrimp
1 cup tomato ketchup
tablespoons horseradish
1 tablespoon lemon juice
1/2 teaspoon Worcestershire
1/4 teaspoon salt
1 dash black pepper

Directions:
Combine all ingredients in bowl,
cover and refrigerate overnight.

BMT Hero Sandwich

Fresh baked grinder rolls stuffed with
deli sliced ham, pepperoni and salami.
Cheese, tomato, onion and lettuce.
Tasty and a good lunch or snack.

Ingredients:
Grinder rolls
unsalted butter
sliced ham
sliced pepperoni
sliced salami
sliced american cheese
sliced tomato
sliced onion
lettuce
mayonnaise or oil

Directions:
Slice roll in half, spread with and butter
then grill to get brown marks on bread.
Later meat and cheese with vegetables.
Top with other half of bread and serve.

Wasabi Powder Mayonnaise

This is what gives Chinese mustard it's kick.
Mixing Wasabi with mayonnaise is a treat.
Use as a potato chip dip to wake people up.

Ingredients:
1/2 cup mayonnaise
1 teaspoon Wasabi powder

Directions:
In a bowl mix together and serve.



Mushrooms in Garlic Butter

These are good to use in making omelettes,
adding into soups and stews for great taste.

Ingredients:
1 pound fresh mushrooms
4 tablespoons unsalted butter
4 cloves garlic, peeled and minced
1/2 teaspoon sugar
dash of fresh lemon juice
dash of ground black pepper

Directions:
Preheat saute pan and melt butter.
Clean mushrooms by rinsing in cold water.
Slice fresh mushrooms if not already sliced.
Add garlic to butter in pan and then add in
the mushrooms to cook or steam and brown.
Stir until done and season with lemon juice
and freshly ground black pepper to taste.


Better Scrambled Eggs

Most people think they know scrambled eggs.
Here's The way for creating the best there is.

Ingredients:
6 large eggs
2 tablespoons cold water
1 tablespoon unsalted butter

Directions:
Bring eggs to room temperature
Melt butter in a saute pan and turn heat off.
Beat eggs in a measuring bowl with water.
Pour beaten eggs in the saute pan and turn
the heat to medium low while stirring eggs
to allow them to cook and set up into the
fluffiest scrambled eggs you ever have made.




Braised Cherry Tomatoes

Braised garden fresh tomatoes in broth.
You can also use store bought plum or
grape sized tomatoes that are a real kick.
The whole tomatoes get heated through
and pop when you prick them with a fork.

Ingredients:
Whole small tomatoes
2 cups water
1 tablespoon Better Than Chicken Broth
Grated parmesan or Romano cheese

Directions:,br>
Place tomatoes in a saucepan.
In a cup combine chicken base and water.
Pour over tomatoes and bring to a simmer.
Don't let the liquid boil, keep it low and slow.
After tomatoes have heated through remove
them and serve with grated cheese if desired.


Bacon and Apple Pancakes

Slices of bacon cooked inside pancakes,
along with some cinnamon apple slices.
Bet you can't eat just one!

Ingredients:
6 slices smoked bacon
1/2 apple, peeled and thinly sliced
Cinnamon sugar
1 cup pancake mix
1 large egg
1/4 cup milk
Maple syrup to serve

Directions:
In a bowl combine pancake mix, egg
sliced fresh peeled apples and milk.
Season batter with ground cinnamon.
Set aside for 10 minutes to batter up.

Heat skillet or griddle on medium heat.
Arrange bacon slices 2 inches apart.
Cook until just starting to get crispy.
Ladle some pancake batter over each
slice of cooked bacon to cover.
Cook until bubbles appear then turn over.
Cook other side until browned and done.
Remove to serving plate with maple syrup.

Stuffed Cheese Grape Leaves

An old standard on any Greek Tapas Table.
My recipe has rice along with mint and lemon.
I add in cream cheese to wow the crowd.
Even Yiayia says poli kaliat on her first bite.

Ingredients:
40 grape leaves, washed and dried
1 cup cooked rice
8 tablespoons cream cheese, softened
2 fresh lemons, and zest of
1 red onion, peeled and chopped
4 garlic cloves, peeled and minced
10 deli sliced salami, quartered
2 cups chicken broth

Directions:
Preheat oven to 300 degrees F.
In a mixing bowl combine rice,
cream cheese, lemon, onion,
garlic into a creamy paste mixture.
place a slice of salami on each grape leaf
then a smear of cream cheese mixture.
Roll them up into little packages.
Place in a baking dish and pour on broth.
Cover baking dish with foil and bake
for about 1 hour or so until heated through.


Adobo Flavored Chicken Wings

Adobo seasoning is often used in Mexican,
Filipino and Puerto Rican chicken dishes.
It has a mild garlic and turmeric flavoring.
I like to use the Adobo with black pepper.

Ingredients:
2 tablespoons olive oil
2 onions, peeled and halved
4 potatoes, cut in 2" pieces
dashes of salt and ground pepper
8 chicken wings, frozen
2 tablespoons Adobo seasoning

Directions:
Preheat oven to 375 degrees F.
Place olive oil inbotttom of roasting pan.
Arrange peeled and halved onions and
sliced potatoes in the roasting pan.
Place frozen chicken wings right on top
of the onions and potatoes in roasting pan.
Sprinkle chicken with Adobo seasoning.
Cover roasting pan and bake for 90 minutes.
The chicken should read 180 degrees when done.
For crisper skin put under broiler for a few minutes.



White Rice Tea

Also known as Jook this is a warming tea.
You can eat the rice or simply sip the tea.
It's said to aid in digestion and well being.

Ingredients:
4 cups cold water
1 cup uncooked white rice

Directions:
Bring water and rice to a simmer in
a soup pot on low to medium heat.
Let simmer for two hours or more.
Adding more cold water if needed.

Salami and Cheese Appetizers

These are easy to prepare and are almost
always the first item to go on the buffet.

Ingredients:
24 slices salami
24 teaspoonfuls cream cheese
24 slices hot peppers

Directions
Spread some cream cheese on each salami.
Top with a slice of hot pepper and roll up.
Use toothpicks to hold closed if needed.

Crispy Chicken Wings

One way to have crispy skinned wings
is to bake them first and let them cool.
Then fry them in a little oil to finish off.
You can refrigerate them for a few days,
before finishing them in the oil and serving.

Ingredients:
12 chicken wings
canola or peanut oil

Directions:
Line a baking sheet with foil.
preheat oven to 350 degrees F.
Arrange wings on baking sheet,
bake for about 1 hour until golden.
Remove from oven and let wings cool.
Heat oil in a skillet and fry wings just
until the skin gets all browned and crispy.


Lazy Way Cooked Rice

This is how I cook up some white rice to add
 into soups or save to make Chinese fried rice.
There's almost no effort involved except to
stir the rice every once in awhile while cooking.

Ingredients:,br>
3 cups cold water
1/4 cup white rice

Directions:
Place water and rice in a saucepan and
bring to a boil on high heat, lower heat to
a simmer and cook rice until soft and tender.
It should take about 20 minutes or so.
Stir rice to keep it from sticking to pan bottom.
