Olive Oil Crumb Coffee Cake

One day we were getting low on breakfast treats.
There was not one pad of butter in the house.
It was a very cold winter day and I didn't want to
go to the store to buy a pound of butter to bake with.
So I came up with this tasty recipe
for a coffee cake made with olive oil in place
of butter in the recipe to have something for breakfast.
This cinnamon crumble coffee cake along with
a cup of coffee is the perfect way to start your day!

Ingredients:
Coffee Cake:
1 1/2 cup Flour
3/4 cup Sugar
2 teaspoon Baking Powder
½ teaspoon Salt
2 eggs
3/4 cup Milk
1/4 cup Olive Oil

Crumb Topping:
4 tablespoons Olive oil
4 tablespoons Sugar
1/2 cup Flour
2 teaspoons cinnamon

Directions:
Preheat oven to 350 degrees F.
Grease an 8 x 8 inch or 9 x 9 inch pan.
Then follow the directions for
the crumb topping and coffee cake.

Crumb Topping:
In a large mixing bowl, combine Flour, olive oil, sugar and cinnamon. Blend until the mixture has a crumb consistency.
Set aside to add to the top of the coffee cake.

Coffee Cake:
Combine Flour, sugar, baking powder,
and salt together in a large mixing.
In another bowl, beat eggs.
Then add olive oil, followed by milk.
Stir the liquids into the dry ingredients
and mix until a batter is formed.
Pour the batter into the greased pan
and sprinkle with the crumb topping.
Slightly pat the crumb topping
into the coffee cake batter.
Then bake in the oven for 30 minutes.
Let the cake sit for at least
15 minutes before serving.
