Peaches and Cheese

Here is a baked ricotta cheese and peach dessert.
Simple, with a few ingredients and tastes great.
The cheese puffs up and around the peaches
creating a nice brown creamy texture.

Ingredients:
2 eggs
2 cups ricotta cheese
1 teaspoon vanilla
6 fresh peaches
3 or 4 tablespoons sugar
2 tablespoons flour
cooking spray

Directions:
Preheat oven to 350 degrees F.
Coat a baking dish with cooking spray.
Coat prepared baking dish with flour.
In a mixing bowl combine eggs, cheese
and vanilla and whip for a few minutes.
Pour cheese mixture in baking dish and
arrange peach slices over top.
Bake uncovered for 45 minutes or so.
Remove and let cool before serving.

Saurkraut Pasta Salad

This is really easy to prepare
and is really good tasting.
Because it has no mayonnaise,
it can be left out all day long.

Ingredients:
1 pound salad pasta
1 can sauerkraut with juice
1 small red onion

Directions:
Bring 6 cups water to a boil in a large soup pot,
Place pasta in boiling water and cook salad pasta
such as elbow macaroni as directed on box, drain.
Place in a serving bowl along with the can of sauerkraut.
Peel and chop red onion then stir into pasta salad.

Quick Homemade Pickles

You can make some very tasty pickles in an hour.
All you need is some white vinegar, salt and spices.

Ingredients:
1 large fresh cucumber
1/2 cup white vinegar
2 cups cold water
1/2 cup sugar
2 tablespoons salt
1 tablespoon pickling spices

Directions:
Place vinegar, water, sugar, salt and spices in a pot.
Stir to dissolve sugar and bring to a boil on high heat.
Slice cucumber to desired thickness and place in pot.
Let boil for one minute and remove cucumber slices out
and into a glass jar with a lid.
Pour brine solution over cucumber slices and cover.
Place in refrigerator for at least one hour to cool.
