Shrimp and apples in a creamy sauce flavored with garlic,
bay leaf and curry powder--serve over rice.
Ingredients:
2 tbsp butter
1/4 cup finely chopped onion
1/4 cup finely chopped pared apple
1 bay leaf
1 large clove garlic, crushed
2 tbsp flour
3 tsp curry powder or to taste
1 cup clear, fat free, strong chicken broth
1 cup heavy cream
Salt to taste
2 lbs frozen shelled raw shrimp, cooked
Directions:
In a medium saucepan, over low heat, melt butter.
Add onion, apple, lemon, bay leaf and garlic then cook gently,
stirring often, until onion has wilted.
Stir in flour and curry powder.
Remove from heat, then gradually stir in broth and cream,
stirring constantly, until thickened and boiling.
Add salt and shrimp then gently reheat.
Remove bay leaf and serve over rice.
