Orange juice gives these button mushrooms
a bright, tangy and citrus flavor.
These tasty mushrooms keep for up to
1 week in the refrigerator, covered.
Ingredients:
1/4 cup cider or white-wine vinegar
1/4 cup orange juice
2 teaspoons minced garlic (2 large cloves)
1/4 teaspoon ground cumin
Pinch of salt
1/8 teaspoon freshly ground black pepper
3 cups water
1 teaspoon dried saffron or 1/2 teaspoon turmeric powder
8 ounces whole fresh button mushrooms
Directions::
Combine the cider, orange juice, garlic,
cumin, salt, and pepper in a bowl large
enough to hold the mushrooms. Set aside.
Bring 3 cups of water to a boil.
Add the saffron and mushrooms.
Reduce heat to medium and simmer for 5 minutes.
Drain the mushrooms and place
in the marinade while still warm.
Serve cool or chilled.
