Use the freshest ripest tomatoes in this relish.
It's good to serve along side pork or chicken.
Ingredients:
2 large onions
6 plum tomatoes
3 tablespoons vegetable oil
Salt and pepper to taste
3 tablespoons balsamic vinegar
Directions:
Peel the onions and cut them in half vertically.
Slice the onion into thin strips to make about 3 cups.
Halve the plum tomatoes, then chop them
into 1-inch cubes to make about 3 cups.
Cover a pan with the olive oil and
sauté the onion until soft, about 5 minutes.
Add the tomatoes, salt, and pepper,
and cook the relish over medium heat for 6 to 8 minutes.
Add the balsamic vinegar and serve.
