This is a recipe for a very refreshing soup.
Great to serve on a hot summer day.
Ingredients:
2 cucumbers, peeled, seeded, and sliced
1 garlic clove, peeled and minced
1 red onion, peeled and chopped
1/2 teaspoon salt or to taste
white pepper to taste
2 Tablespoons olive oil
1-1/2 cups plain yogurt
1/2 cup buttermilk
1 Tablespoons lemon juice
1/2 cup walnuts, chopped fine
Directions:
Combine all ingredients in a blender or processor,
pulse until soup is of desired consistency.
Chill an hour before serving.
