Coquilles Saint Jacques

Coquilles Saint Jacques:
is traditionally served on scallop shells,
is most often eaten as a first course, or appetizer,
is very very good eats!
could benefit from the use of some bacon fat...

Ingredients:
1/4 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon curry powder
1/8 teaspoon cayenne pepper
1 1/2 pounds Imitation Crab Meat
4 tablespoons butter
8 ounces fresh sliced mushrooms
1 cup chopped onion
2/3 cup dry white wine
3 tablespoons bread crumbs
2 tablespoons butter, melted
1/3 cup grated Gruyere cheese
1 tablespoon fresh lemon juice

Preparation:
Mix the flour, salt and smoked paprika together in a large bowl.
Add the crab meat stuff to the bowl and toss together
until the crab looking pieces are completely coated
in the spiced flour mixture.

Right about here I lost my notes, so your on your own.
Easy on the garlic don't be going all scampy on me.
What ever you end up with it will be just great.
I think some fresh lemon should appear too.
