Baked Parmesan Salmon

I never thought of putting mayonaise on food
and cook it in the oven, when you think about it
it makes sense because mayonaise is mostly oil.
This recipe works very good, the fish is moist.

Ingredients:
4 salmon fillets, skin removed
1/4 cup Mayonnaise
2 Tablespoons Grated Parmesan Cheese
1/8 teaspoon ground red cayenne pepper
2 teaspoons lemon juice
10 Ritz crackers, crushed

Directions:
HEAT oven to 400°F.
In bowl mix mayonaise, cheese and pepper
until well blended, set aside.
Place fish in shallow foil lined pan,
drizzle with lemon juice.
Top with mayonaise mixture,
spread to evenly cover fish.
Sprinkle with cracker crumbs.
Bake 12 to 15 minutes or
until fish flakes easily with fork
