Bacon Dressed Spinach or Dandilion Greens

Before consuming large quantities of
bacon grease was a no no we used to have
this Bacon grease dressing on lettuce it was good.

Ingredients:
2 quarts young spinach leaves, or dandilion leaves
8 slices bacon, diced
1/3 cup red wine vinegar
1/2 teaspoon salt
3 to 4 tablespoons finely chopped red onion

Directions:
Put spinach or dandalion greens
in a large serving bowl.
In a saucepan, fry bacon until crisp,
remove with slotted spoon,
Add all other ingredients.
Sprinkle over the spinach or greens.
Toss until blended well.
Serve with crusty Italian bread.
