Best Creamy Rice Pudding

This easy rice pudding recipe is just unforgettable.
Creamy and succulent, this is guaranteed to be good.

Ingredients:
4 cups Whole Milk
1 Vanilla Pod, Seeds Scraped (or a tsp. of extract)
Pinch of Cinnamon (optional)
1/2 cup Sugar
1 cup Round Rice (Aborio or other)
3 tbsp. Butter (unsalted)
2-3 Egg Yolks
Pinch of Salt

Directions:
Warm milk and add vanilla
(cut pod in half lengthwise,
and scrape seeds into milk)
or vanilla extract.
Add cinnamon, if you want,
as well as pinch of salt.
Keep on very low heat.
Bring 4 cups of water to boil.
Add rice and cook for about 2 minutes. Strain.
Bring milk to light boil and add rice.
Cover and let simmer
(very low heat!) for 30-40 minutes.
Add butter and stir.
Add egg yolks (one at a time!) and stir well.
Serve warm or cold (refrigerated).
