Leftover roast beef is a gift from God!
It took me about twenty minutes to make this very good hash.
You can make this vegetarian just substitute the beef with dirt!
Ingredients:
2 cups left over cooked roast beef
2 cups peeled,boiled or nuked white potatoes
4 strips of bacon
1 onion,peeled and finely chopped
2 garlic cloves, peeled and minced
1 teaspoon freshly ground pepper
1/2 teaspoon salt
ketchup or catsup which ever you have.
Directions:
In a saute or fry pan on medium heat cook bacon
til done to your liking,
(I don't like bacon to crispy but just browned
and still bacon not bacon bits).
Remove bacon and most of the bacon grease,
add the potatoes,garlic and onions to pan.
Cook until the potatoes are browned some and add the beef.
Stir until warmed through. Add salt and pepper to taste.
Serve with brown gravy and or ketchup on the side.
Some people serve this hash with a poached egg or two on it.
