Biscotti

I like these cookies because they stay good
in the cookie jar a good long time.
There great for dunking in
coffee, tea or hot chocolate.

Ingredients:
1 cup sugar
1 teaspoon baking powder
2 tablespoons butter
3 eggs
2 1/2 cups flour
1 teaspoon anise extract

Directions:
Preheat oven to 350 degrees.
In a large bowl combine and cream together
eggs and butter, add sugar, baking powder
and one cup flour.
Blend in the anise flavoring
and then the rest of flour.
Spoon onto greased cookie sheet forming two
long logs about 1 1/2 inches wide by 1 inch high.
Bake for about 20 minutes.
remove from oven and cut into 1 inch thick slices.
Place each cookie on its side and bake again for about
10 minutes, turning cookie over to brown both sides.
