I really like the freshness of cheese curds
Making a recipe using them is a tough one.
Here I present a recipe for cheese curd jelly.
Ingredients:
4 Lemons
4 Large Eggs
1 lb Sugar
4 tablespoons Butter
Finely grate the rind of the lemons,
just the yellow surface,
not the white pith.
Juice the lemons and strain the juice.
Put the grated rind, the strained juice,
the sugar, the beaten eggs
and the butter into a double boiler
over simmering water,
and stir until it thickens to coat the spoon.
put in sterilised jars
and cap with sterilised caps.
