I first had coconut shrimp at a Christmas party
and thought they were really good, so I decided
to come up with a recipe of my own, here it is.
At the time I had a ripe mango on the counter.
24 medium to large shrimp,deveined
2 eggs, lightly beaten
1 cup coconut flakes
24 wonton wrappers
1 ripe mango or 1/2 can mango slices in juice
1 crushed clove garlic
1 tablespoon chili sauce
1 tsp. sugar
Fresh corriander or 1/2 tsp. of dry
oil for deep frying
Leave the tails on the shrimp.
Dip the shrimp in the beaten eggs
and then into the coconut.
Wrap individual shrimp in a
wonton wrapper with the tail exposed.
Mash & mix the mango with garlic,
chili sauce, sugar and coriander.
Deep fry until wontons are golden colored.
Drain on paper towels
and serve with the mango sauce.
