I made these just tonight to fill with
some left over chicken and black beans.
A good recipe, better than store bought.
Ingredients:
3 Cups All Purpose Flour
1/2 teaspoon Salt
1 Teaspoon Baking Powder
1/2 cup Vegetable shortening
1 cup Hot water
Flour for dusting and rolling
Directions:
Mix Flour, salt, and baking powder.
Cut in vegetable shortening to resemble crumbles.
Add water, knead dough for about 5 minutes.
Gather dough in a ball.
Cover with a damp kitchen towel
or a plastic film wrap.
Let it rest for 15 to 20 minutes.
Divide dough into 10 equal size balls.
One ball will make one tortilla.
Flatten one ball to form a patty.
Roll out to form a 6 to 9" diameter disc
no thicker than a dime.
Heat a griddle medium to hot.
Put the disc on the griddle.
Cook about 30 seconds.
Use a turner to lift an edge
to see that the underside has brown spots.
On the top, you will notice some bubbles.
Flip over the tortilla
to finish cooking another 30 seconds.
