Ricotta with Mushroom Roast Red Pepper Pie

Having to use up some fresh mushrooms
and a big old tub of ricotta cheese,
I came up with this ricotta cheese pie.

Ingredients:
1 store bought pie crust
2 cups ricotta cheese,drained
1 pint fresh mushrooms,sliced
2 eggs
1/4 cup black olives,pitted
1/2 cup sweet roasted red peppers,chopped
2 tablespoons roasted onions,chopped
2 tablespoons flour
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley

Directions:
Preheat oven to 350 degrees.
In a bowl combine cheese and eggs.
Add mushrooms,olives,peppers,flour,onions,garlic and parsley.
Place pie crust in a 8 inch round 2 inch high cake pan,
carefully pour filling into pie crust even out,
and bake until pie crust is done
and the cheese is browned.
remove from oven
and let cool some before serving.
