I saw this done on tv and just had to try it,
I've made a few changes to my taste from the
original recipe. This was impressive looking
at the table but lacked intense wine flavor.
Ingredients:
1 pound thin spaghetti
4 cups red Zinfandel wine
1 teaspoon sugar
1/3 cup olive oil
2 garlic cloves,peeled and finely chopped
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon fresh black pepper
1/2 cup grated Parmesan cheese
Water
Directions:
Fill large pot with one gallon water,add salt.
Bring to a boil, add pasta, reduce heat.
Cook pasta to almost al dente.
Pasta should not be fully cooked.
Drain pasta and return pot to heat.
Add wine and sugar to pot and boil
until liquid is reduced some.
Add spaghetti and shake pot.
Stir until pasta is coated well in wine.
Add garlic,cayenne pepper and some olive oil.
Remove from heat, season with freshly
ground black pepper and drizzle
with a bit more olive oil.
Top with cheese. Serve.
